The dish of the sun/h2>
As colorful as the sun, this dish was and still is typical of the Trentino region: polenta. Considered by past generations a poor man’s dish, today it relives a new season of taste, thanks to the many chefs who have begun to use it as the main ingredient for their refined recipes. The Valle delle Chiese (Valley of Churches) is specialized in the cultivation of corn, where experienced farmers harvest corn, let it dry in the wind, and slowly grind it, as was done long ago.
