Our pizzaiolo Salvatore shows you the characteristics of our pizza:

  • very little yeast (about 0.1% per kg of flour)
  • very long leavening (minimum 48 hours)
  • use of ground quality grain (Molino Quaglia)

The flour we use is of the highest quality, stone grounded, in which all the properties of grain are highlighted, thus giving the pizza an exquisite taste. “
